Wazawan a Kashmiri: A multi-course meal in Kashmiri cuisine, the preparation of which is considered an art form and a point of pride in Kashmiri culture and identity. Almost all dishes are meat-based, with some vegetarian dishes consisting of mutton or chicken. It is popular. It is also served in Kashmiri food festivals and international reunions.
The last formal feast in Kashmir is Shahi Wazwan. Of its thirty-six courses, between fifteen and thirty may consist of meat preparations, which are cooked overnight under the supervision of a master chef known as Westways.
